Making winter kimchi.
Here in Korea, the birthplace of kimchi, most households participate in something called "kimjang" heading into the winter. This refers to making large quantities of kimchi to prepare for the cold winter. It's an annual event, somewhat akin to preparing for the winter.
Of course, the number of households that do kimjang is on the wane as more and more people opt for store-bought kimchi. But many households still do it.
Late last year, I helped out my mom with kimjang. It was rough going. My mom brines the cabbage herself, which is really labor-intensive. But the boiled pork bossam we had with the unfermented kimchi that night was to die for. It was so delicious that it washed away the fatigue.
김치 담그기.
김치 종주국인 우리나라는 겨울을 앞두고 대부분의 가정에서 "김장"이라는 것을 한다. 김장은 추운 겨울을 대비하여 많은 양의 김치를 담그는 것을 뜻한다. 월동 준비와 비슷한 연례 행사이다.
물론 김치를 사다 먹는 사람들이 점점 늘어나면서 김장을 하는 가정은 감소 추세이다. 하지만 아직까지 김장을 하는 가정은 제법 많다.
작년 말에 나는 엄마가 김장하시는 것을 도와드렸다. 그 과정이 쉽지는 않았다. 엄마는 배추를 직접 절이시기 때문에 손이 정말 많이 간다. 그렇지만 김장을 한 날 저녁에 겉절이와 함께 먹은 돼지 수육 보쌈은 정말 꿀맛이었다. 너무 맛있어서 피로가 한 순간에 날아갔다.
